An outstanding aged GoudaNov 14, 2011

It isn't mentioned above, but Old Amsterdam is aged at least 18 months before shipping. Something magical happens to Gouda when it's aged. It transforms from a tasty if boring semi-soft cheese into a hard and complex cheese that approaches young Parmigiano-Reggiano in warmth and texture. Nice caramel and nutty notes. The cheese also has a pleasant crunch, the crystallization of acids that are a sign of good aging.
Old Amsterdam can be grated and used like a dry Italian cheese, but it also cuts neatly. It's soft enough to serve as slices or cubes. Delicious, magical stuff.
